Scrumptious Scampi
  • 24 large shrimp
  • 1/2 cup butter
  • 4 cloves garlic, crushed
  • 1/4 cup ice water
  • 3/4 cup fresh parsley, coarsely chopped salt and pepper
  • 1 cup Parmesan cheese, grated
Shell and butterfly the shrimp, leaving the tail shell intact. Melt butter, add garlic: stir, being careful not to burn. Add shrimp and cook, turning constantly, until pink. Add ice water and parsley and season to taste. Simmer, covered, just until parsley wilts. Sprinkle with cheese and heat until cheese melts.

Serves 4
